One of my family’s favourite meals has to be chilli con carne, the children just love being able to help themselves to all the different elements that make up this meal. We like to have a huge salad, a pot of
chilli con carne, basmati rice, grated cheddar, cherry tomatoes, guacamole and tortilla chips.
When I’m making chilli con carne for my children I actually don’t add any chilli to the pot but instead us older ones will just add some chilli sauce onto our own after it’s been served up, that way everyone’s happy!
This is such an easy meal to make, once the chilli’s in the pot it can simmer away for as long as you like, meaning you can prepare it hours in advance while you get on with what you need to do.
Chilli night might look impressive to my little people but it’s actually a very simple meal to throw together.
Chilli con carne ingredients
2 large onions, diced
4 cloves of garlic, minced
1 kilo (2.2 pounds) minced (ground) beef
2 tsp ground cumin
2 tsp ground allspice
1 tsp cloves
1 cinnamon stick
2 bay leaves
1 tsp dried oregano
1 tsp sea salt
black pepper to taste
2 tbsp cider vinegar
800g tinned tomatoes
1 tbsp dark brown sugar
800g tinned kidney beans
Fry the onions, in a little butter or oil of your choice, until softened. Add the garlic for a minute or so then add the mince and brown.
Add all the rest of the ingredients, put the lid on and bring to a simmer. Turn down the heat and let simmer for at least one hour, up to four hours but do stir every so often.
3 large avocados
Juice of 2 large lemons
1 tsp sea salt
1/2 tsp paprika
small bunch coriander (cilantro) chopped
Very simply remove the skin and stones from the avocados, give them a mash with a fork or potato masher. Stir in all the rest of the ingredients.
Serve the chilli and guacamole with a large salad, some basmati rice, tortilla chips, cherry tomatoes, grated cheddar and whatever else you might fancy!
